Ingredients:

  • Just Meats Hawaiian Teriyaki Beef
  • 1 medium onion, peeled and quartered
  • 1 medium jalapeño, sliced with seeds removed
  • 6 cloves garlic, smashed
  • 1 cup broth (chicken or beef)
  • 1 cup pineapple juice
  • Juice & zest of one lemon
  • Juice & zest of one lime

Mexican Sides:

  • Lettuce wraps or a salad
  • Warmed low-carb tortillas
  • Peppers & onions
  • Shredded cheese
  • Cilantro Lime wedges
  • Pineapple (for the hubby who’s not keto)
  • Avocado slices

  • There is pineapple juice in this recipe, but it is JUST for flavor and to tenderize the meat. You are not going to be consuming any of the pineapple juice.
  • Instructions: Wash the lemon and lime. Using a vegetable peeler, peel thin strips of the skin and add them to the pot. Juice the lemon and lime, adding the juices to the pot. Heat 2-3 tbsp of oil in a pot over medium-high heat. Sauté the garlic, onion, and jalapeño until the onion is translucent. Add the broth and pineapple juice to the pot. Cook over high heat until boiling. Then, turn to simmer and add the beef. Turn off the heat, take only the meat out of the pot, and serve hot with your favorite Mexican sides. Serve in lettuce wraps, in a large salad, or with warmed low-carb tortillas. Top with creamy avocado, Pico de Gallo, salsa, jalapeños, red onions, pineapple, and lime wedges.
