Paleo Chia Pudding with Plantains

Need a cheat meal but don’t want to overdo it with fast food or processed foods? Try a chia pudding but with plantains and nut or coconut milk. It’s a great cold dessert to satisfy any sweet tooth. Plantains are not keto so note that this is a Paleo recipe categorized as Paleo.

Paleo Chia Seed Pudding with Plantains Recipe

Ingredients:

  • 3–4 tbsp Chia seeds
  • 1 cup Unsweetened almond milk, or coconut milk
  • 1/2 tbsp sweetener of choice. I used Lakanto
  • 1/2 Plantain, ripe (28.8 net carbs)
  • 1/2 tbsp Pure Vanilla Extract, optional
  • Toppings: Fresh berries, nuts, nut butter, etc.

Instructions:

I boiled the plantains until medium softened then to prepare them, I cut them into small cubes. This is optional if you want your dessert lower in carbs. Instead of plantains, you can use strawberries or blueberries, nuts, or nut butter.

For your sweetener, you can use monk fruit sweetener, Erythritol, Stevia, low carb syrup, or any sweetener of choice.

In a bowl or mason jar, stir together chia seeds, milk, sweetener and vanilla. If using a mason jar, shake it up for a quick and easy mix.

Once well combined, let sit for 5 minutes. Then stir well to combine the chia seeds. Refrigerate for 1-2 hours or overnight. The pudding should turn out thick.

Chia pudding can be stored for up to 5-7 days in an airtight container in the refrigerator. Enjoy!
