Here are two classic Italian recipes that have been modified to be keto-friendly and sugar-free:

Keto Eggplant Parmesan

Ingredients:
– 1 large eggplant, sliced into 1/2-inch rounds
– 2 eggs, beaten
– 1 cup almond flour
– 1/2 cup grated Parmesan cheese
– 1 teaspoon dried Italian seasoning
– Salt and pepper to taste
– Olive oil for frying
– 1 cup sugar-free marinara sauce
– 1 cup shredded mozzarella cheese

Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a shallow dish, mix together the almond flour, grated Parmesan cheese, dried Italian seasoning, salt, and pepper.
3. Dip each eggplant slice into the beaten eggs, then dredge in the almond flour mixture, coating both sides.
4. In a large skillet, heat olive oil over medium heat. Fry the eggplant slices in batches until golden brown on both sides. Remove and drain on paper towels.
5. In a baking dish, spread a thin layer of sugar-free marinara sauce. Arrange the fried eggplant slices in the dish, overlapping slightly.
6. Top each eggplant slice with a spoonful of marinara sauce and a sprinkle of shredded mozzarella cheese.
7. Repeat the layers until all the eggplant slices are used up, finishing with a layer of marinara sauce and mozzarella cheese on top.
8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
9. Serve hot, garnished with fresh basil if desired.

Keto Pesto with Zucchini Noodles

Ingredients:
– 4 medium zucchinis, spiralized into noodles
– 1/2 cup homemade or store-bought sugar-free pesto sauce
– 1/4 cup grated Parmesan cheese
– Salt and pepper to taste
– Optional: cherry tomatoes, pine nuts, grilled chicken or shrimp for topping

Instructions:
1. Bring a pot of salted water to a boil. Add the zucchini noodles and cook for 1-2 minutes, until just tender. Drain well.
2. In a large bowl, toss the cooked zucchini noodles with the sugar-free pesto sauce until evenly coated.
3. Season with salt and pepper to taste.
4. Divide the zucchini noodles among serving plates. Top with grated Parmesan cheese and any optional toppings of your choice, such as cherry tomatoes, pine nuts, grilled chicken, or shrimp.
5. Serve immediately and enjoy your keto-friendly zucchini noodles with pesto!
