Dairy free, gluten free and sugar free meatballs

Keto Swedish Meatballs

For the meatballs:

  • 1 pound ground beef
  • 1 pound ground pork
  • ¼ cup almond flour
  • ½ medium onion, minced
  • 1 teaspoon garlic salt
  • ¼ teaspoon nutmeg
  • 2 eggs
  • 2 tablespoons fresh Italian parsley
  • ½ teaspoon allspice
  • 1 tablespoon Worcestershire sauce
  • olive oil (for sautéing)

For the sauce:

  • 1 cup chicken stock (or beef or pork stock)
  • ½ cup nut milk
  • ½ cup cashew cream – see how to make it here
  • pinch salt and fresh ground pepper

For the meatballs, inmy picture, I added chopped red bell pepper too. This is optional, as I wanted some color for the photo.

Top with fresh Italian parsley and parmesan cheese, optional, if you can have dairy.

Serve with cauliflower rice, zucchini noodles, shirataki noodles, or any type of low carb rice or noodles of your choice.
