Ingredients:
– 1 head of cauliflower, riced (or about 4 cups of cauliflower rice)
– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 1/2 cup diced tomatoes (fresh or canned)
– 1 teaspoon smoked paprika
– 1/2 teaspoon ground cumin
– Salt and pepper to taste
– Optional: chopped fresh parsley or cilantro for garnish
Instructions:
1. Start by preparing the cauliflower rice. You can either use a food processor to pulse the cauliflower florets until they resemble rice, or use a grater. Set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.
3. Add the diced bell peppers to the skillet and cook for another 3-4 minutes, until they begin to soften.
4. Stir in the diced tomatoes, smoked paprika, and ground cumin. Cook for an additional 2-3 minutes to allow the flavors to meld.
5. Add the cauliflower rice to the skillet and stir to combine with the other ingredients. Cook for 5-7 minutes, stirring occasionally, until the cauliflower rice is tender but still has a bit of bite to it.
6. Season the Spanish cauliflower rice with salt and pepper to taste, adjusting as needed.
7. Remove the skillet from the heat and transfer the Spanish cauliflower rice to a serving dish.
8. Garnish with chopped fresh parsley or cilantro if desired, and serve hot as a delicious and keto-friendly side dish or main course.
