Keto Egg Loaf Recipe
Ingredients:
6 eggs large, room temperature
6 oz / 170g cream cheese, room temperature
4 tbsp / 30g coconut flour
1/4 cup / 50g Kerry Gold butter, melted (I used Ghee butter instead)
2 tbsp granulated sweetener to taste (I used Swerve)
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
Instructions:
I used loaf pans for this recipe and I decided to make 2 loaves, so yeah, I went through a lot of eggs that day. 😂 Pre-heat your oven to 350°F / 175°C.
In a large bowl, I added the eggs, cream cheese, butter, sweetener and mixed well. You can place these ingredients into a food processor to make it smoother. Next, add the flour, baking powder, cinnamon, nutmeg and mix well.
I sprayed the loaf pans with coconut oil spray. I use this one at Trader Joe’s.
Pour the mixture into the loaf pans and bake for 40-45 minutes. Look at the results! They should have a golden brown color once it’s ready.
Served with Swerve icing sugar, a sugar replacement, and top with low carb maple syrup from Choc Zero. Delicious!
