Ingredients

– 4 cups shredded green cabbage
– 6 slices bacon, diced
– 1 onion, thinly sliced
– 2 cloves garlic, minced
– 1 tablespoon butter or olive oil
– Salt and pepper to taste
– Optional: chopped fresh parsley for garnish

Instructions

1. In a large skillet, cook the diced bacon over medium heat until it becomes crispy. Remove the bacon from the skillet and set it aside, leaving the bacon fat in the skillet.

2. In the same skillet with the bacon fat, add the butter or olive oil. Add the thinly sliced onion and minced garlic, and cook until the onions are translucent and fragrant.

3. Add the shredded cabbage to the skillet and toss to coat it in the bacon fat and butter/oil. Cook the cabbage for about 8-10 minutes, stirring occasionally, until it starts to soften.

4. Return the cooked bacon to the skillet with the cabbage mixture. Stir to combine.

5. Continue to cook the cabbage and bacon mixture for another 5-7 minutes, or until the cabbage is tender and slightly caramelized.

6. Season the dish with salt and pepper to taste.

7. Serve the keto Irish cabbage and bacon hot, garnished with chopped fresh parsley if desired.
