Let’s make a keto-friendly version of a traditional Haitian dish: Keto Griot (Haitian Fried Pork)
Ingredients
For the Pork:
– 2 lbs pork shoulder, cut into bite-sized pieces
– Juice of 2 limes
– 3 cloves garlic, minced
– 1 tablespoon dried thyme
– 1 tablespoon paprika
– 1 teaspoon ground cloves
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons olive oil (for frying)
For Serving:
– Keto-friendly pikliz (Haitian spicy slaw) or coleslaw
– Sliced avocado (optional)
– Chopped fresh parsley or cilantro for garnish
Instructions
1. In a large mixing bowl, combine the pork pieces with lime juice, minced garlic, dried thyme, paprika, ground cloves, salt, and black pepper. Mix well to coat the pork evenly with the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
3. Once the oil is hot, add the marinated pork pieces in batches, making sure not to overcrowd the skillet. Fry the pork pieces for about 5-7 minutes on each side, or until they are golden brown and crispy on the outside and cooked through on the inside. Repeat with the remaining batches of pork.
4. Remove the fried pork pieces from the skillet and place them on a plate lined with paper towels to drain any excess oil.
5. Serve the keto Griot hot, accompanied by keto-friendly pikliz or coleslaw, sliced avocado if desired, and garnished with chopped fresh parsley or cilantro.
Enjoy the rich and savory flavors of this keto Griot, a traditional Haitian delicacy made low-carb!
