Ingredients

For the Lamb Tagine:
– 1 lb lamb stew meat, cubed
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon ground turmeric
– 1/2 teaspoon paprika
– 1/4 teaspoon ground cinnamon
– 1/4 teaspoon ground ginger
– Salt and pepper to taste
– 1 cup diced tomatoes (fresh or canned)
– 1 cup beef or lamb broth
– 1/4 cup sliced almonds (optional, for garnish)
– Chopped fresh parsley or cilantro (optional, for garnish)

For Serving:
– Cauliflower rice or low-carb couscous (for serving)

Instructions

1. Heat olive oil in a large tagine or Dutch oven over medium-high heat. Add the cubed lamb stew meat and brown on all sides, about 5-7 minutes. Remove the lamb from the tagine and set aside.

2. In the same tagine or Dutch oven, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

3. Return the browned lamb to the tagine. Add the ground cumin, ground coriander, ground turmeric, paprika, ground cinnamon, ground ginger, salt, and pepper. Stir to coat the lamb evenly with the spices.

4. Add the diced tomatoes and beef or lamb broth to the tagine. Stir to combine.

5. Bring the mixture to a simmer, then reduce the heat to low. Cover and let the tagine simmer gently for 1.5 to 2 hours, stirring occasionally, until the lamb is tender and the flavors have melded together.

6. Taste and adjust seasoning if needed.

7. Once the lamb tagine is cooked, remove it from heat and let it cool slightly.

8. Serve the Keto Algerian Lamb Tagine hot, garnished with sliced almonds and chopped fresh parsley or cilantro if desired, alongside cauliflower rice or low-carb couscous.

Enjoy the rich and aromatic flavors of this Keto Algerian Lamb Tagine, reminiscent of traditional Algerian cuisine!
