Keto African Peanut Stew

Ingredients

– 1 tablespoon coconut oil or olive oil
– 1 onion, finely chopped
– 2 cloves garlic, minced

– 1 can (14 oz) diced tomatoes
– 1/2 cup natural peanut butter (unsweetened)
– 4 cups vegetable or chicken broth
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper (adjust to taste)
– Salt and pepper to taste
– 2 cups chopped kale or spinach
– 1 cup diced cooked chicken or tofu (optional, for added protein)
– Chopped fresh cilantro for garnish
– Crushed peanuts for garnish (optional)

Instructions

1. In a large pot or Dutch oven, heat the coconut oil or olive oil over medium heat. Add the finely chopped onion and cook until softened, about 5 minutes.

2. Add the minced garlic and grated ginger to the pot. Cook for another minute until fragrant.

3. Add the diced bell pepper and diced sweet potato (if using) to the pot. Cook for about 5 minutes until slightly softened.

4. Stir in the diced tomatoes (with their juices) and natural peanut butter. Mix until well combined.

5. Pour in the vegetable or chicken broth to the pot. Stir in the ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and pepper.

6. Bring the mixture to a simmer, then reduce the heat to low. Cover and let the stew simmer gently for about 20-25 minutes, stirring occasionally, until the sweet potatoes are tender (if using) and the flavors have melded together.

7. Stir in the chopped kale or spinach until wilted.

8. If using diced cooked chicken or tofu, add it to the stew and stir to combine. Let it heat through for a few minutes.

9. Taste and adjust seasoning if needed.
