Keto Cauliflower “Fried Rice”

Coming from a Filipino household, growing up, we always had rice on the table. To be honest, it was difficult in the beginning to stop eating rice on Keto/Low Carb, but now I don’t miss it at all. Cauliflower for a substitute for rice may sound odd to most people, but give it try, you won’t be disappointed. It’s still very hearty and pairs well with many dishes.

Cauliflower rice is versatile to cook with, it’s high in fiber, and an excellent low carb alternative to rice and potatoes. It’s also packed with a number of antioxidants and vitamins. It is only 2g net carb per cup and 18 times fewer carbs than the same quantity of rice. Nutrition Facts

I normally buy this Organic Riced Cauliflower brand, frozen but you can find cauliflower rice in more grocery stores today. I also buy this one from Trader Joe’s. You can also make your own cauliflower rice. Get a head of cauliflower, dry it with paper towel, and use a grater or food processor. Done! Make sure to freeze any unused portions as it goes bad in the fridge.

Keto Cauliflower Fried Rice Recipe

  • 1 Tbsp Sesame Seed Oil
  • 2-3 Cups of Organic Riced Cauliflower, frozen
  • 3 Garlic cloves, minced
  • 1/2 Onion, chopped
  • 3 Tbsp Coconut Aminos
  • 1 Pinch Himalayan Pink Salt
  • 1 Pinch Black Pepper. The one I use includes a grinder too. 😀
  • 1 Tsp Sriracha
  • 1/2 Cup Organic Green Peas, frozen
  • 2 Eggs, scrambled

Heat up a wok on medium high. Add sesame oil. Start by panfrying garlic and onion until brown. Next, add your frozen peas and cauliflower rice to the wok and cook for 5 minutes, watching that the bottom doesn’t burn. Stir in your scrambled eggs and coconut aminos and cook for an additional 5 minutes. Top with salt, pepper, and sriracha to taste. Add any kind of meat to this dish like shrimp, chicken, pork, or beef. I added salmon and avocado to my dish below. Get creative and Enjoy!
