No Bake “Granola” Nut Bars (Keto, Sugar-Free)

This easy peasy keto snacks recipe doesn’t require any baking at all! Just prep the ingredients, mix together, pop in the fridge, and cut into granola bars. Your on-the-go Keto snack great for the kids too. Of course, there is no oats in this recipe but it’s my take on Keto “granola” and it tastes great. I hope you try it! 😀

Keto No Bake “Granola” Nut Bars Recipe

Ingredients:

  • 1 cup chopped raw almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/3 cup unsweetened shredded coconut
  • 1/4 cup unsweetened dried cranberries – you can replace this with sugar free chocolate chips if you don’t like cranberries
  • 1 pinch cinnamon
  • 1/4 cup sugar-free maple syrup – I use this brand Choc Zero – I’m not sponsored, but Choc Zero has the best sugar free maple syrup I’ve tasted. It’s thicker than most and not watery like most Keto/LC brands out there. Get $20 off ChocZero
  • 2 Tbsp organic peanut butter
  • 2 Tbsp butter, melted or you can use ghee
  • 1 pinch sea salt

Instructions:

First, rough chop the raw almonds or place them into a food processor for a few seconds. In a large bowl, mix the nuts, seeds, coconut, cranberries, cinnamon, syrup, peanut butter, salt, and butter. Line a 9 x 9 square baking pan with parchment paper.  Using a spatula, spread out the mixture evenly onto the baking pan. Put in the refrigerator for 1 hour. Cut into bars. Makes 8 bars.
